Loaded Deviled Eggs

This is one of those recipes where I don’t really measure the ingredients. While making the filling, I taste and adjust to get the right balance of creamy and tangy. That’s also how I know they’ll be good — I tasted it. Sure, there are lots of things worse than trash deviled eggs, but not today — not today.

What’s inside

Egg yolks
Mayo
Dijon mustard
Red wine vinegar
Salt
Sometimes curry powder - for me, it’s not a flavor game changer, it's just fun to say I made ‘curried deviled eggs’

What’s on top

Smoked Paprika (or not - depends on what we have)
Chopped Bacon
Scallions

As for the eggs, easy to peel hard boiled eggs, is actually why I got an instant pot. You’ll have to experiment with the settings for the perfect egg setting, but I like the 5-5-5 method.

When I want them to look just right, I fill them using cake decorating tips.
